Taggiasca olives are particularly appreciated for their delicate flavour, which makes them the ideal base for countless Ligurian and Italian specialities. Today it is not certain who should be thanked for the introduction of the Taggiasca olive in the west of Liguria; in fact, according to some it was planted even by the Phoenicians, while according to others by the Benedictine monks who colonized the city of Taggia. In any case, this small black olive, with its delicate taste and slightly fruity aroma has become a symbol of Ligurian cuisine.
