Lentils have been cultivated in Umbra since time immemorial, and are a typical product of the region. The sowing of the lentils takes place in early spring, with harvest, selection and essication taking place in July. The small lentils from Umbria, with their thin and tender skin, do not need to be soaked before cooking. They are rich in proteins, vitamins, fibers and mineral salts. The most traditional recipe is to boil it in plenty of water together with a clove of garlic, a stick of celery, salt and pepper. Once cooked, you can enjoy it with mush potatoes, pork meat or simply with croutons. Ingredients: small dried lentils from Umbria.
