The lentils from Colfiorito, located in the Umbria central region of Italy, are very small in size and they naturally grow in a variegated range of colors, from green, to pink, to tobacco. These are the two main characteristics that separate them from other less premium single-color varieties. They mainly owe their peculiarities to the soil of Colfiorito lentil fields and because of their uniqueness, Colfiorito lentils are listed in the official list of traditional products of the Umbria region, regulated by a consortium. Colfiorito lentils do not need to be soaked before cooking; boil them for 20 mins and they're ready for consumption. They are excellent served stewed with mashed potatoes, or in soups. In Italy, they are traditionally presented on the New Year's Eve dinner table, in combination with zampone or cotechino, pork minced meat. Ingredients: lentils.
